Ham and Cheese Strata

Ham and Cheese Strata
6 slices toasted bread, cut into cubes
1 can (10 3/4 oz) cambells Cheddar Cheese Soup
1 cup milk
4 eggs
1 1/2 cups shredded swiss cheese
1/2 cup cubed ham
salt and pepper, to taste

Directions:
1. Place bread cubes in a 2 qt. greased baking dish. 
2. Mix soup, milk and eggs.  Add cheese and ham, and sprinkle top with salt and pepper.
3. Pour over bread, covering evenly, cover and refrigerate 3-4 hours or over night.  Uncover
4. Bake at 350 degrees for 45 minutes or until knife inserted near center comes out clean.
Cut into bars, and serve!  We love it topped with salsa.  YUMMY!!!

Crock Pot Oatmeal

Crock pot Oatmeal
2 cups milk
1/2 cup brown sugar
1 Tbsp. melted butter
1 tsp. vanilla
1/4 tsp. salt
1 tsp. cinnamon
1 1/2 cup old fashioned oats (not quick cooking or instant)
1 cup peeled, cored, and chopped apple

Directions:
1. Spray the inside of a 3-4 quart slow cooker with nonstick cooking spray.
2. Combine all ingredients in the slow cooker and mix well.
3. Cover and turn on HIGH setting. Cook 3-4 hours (or on LOW setting cook 5-7 hours) until oatmeal is tender. Stir well before serving.
This a great recipe for holiday mornings, or just start on a busy morning, and let it go.  This recipe makes 8 servings so its great for the whole family!  What a way to start your day, a warm, hearty breakfast with your family?  Sounds like a great day to me!

Pumpkin Oatmeal

Pumpkin Oatmeal


1 cup milk
1/4 cup firmly packed brown sugar
1/2 cup canned pumpkin (more or less depending how much you like)
2 tsp vanilla extract
1 1/2 Tbsp cinnamon
1 cup old fashioned oats
1/2 tsp pumpkin pie seasoning
2 Tbsp milled flax seed (opt)
Dried fruit and nuts
Directions:
1. In a small saucepan, combine the milk, sugar, pumpkin, vanilla, flax seed, and spices. Bring to a gentle boil and stir in the oatmeal. Reduce the heat and simmer for 2-3 minutes , until the oatmeal is soft and creamy.
2. Spoon the oatmeal into bowls, sprinkle with dried fruit and nuts. If you like, serve with warm maple syrup (my kids love the maple syrup, but they think they are getting extra sugar...  Too bad its sugar free).

Baked Oatmeal

Baked Oatmeal
3 cups rolled oats
1 cup brown sugar
2 teaspoons ground cinnamon
2 teaspoons baking powder
1 teaspoon salt
1 cup milk
2 eggs
1/2 cup melted butter
2 teaspoons vanilla extract
3/4 cup dried cranberries

Directions:
1.Preheat oven to 350 degrees F (175 degrees C).

2.In a large bowl, mix together oats, brown sugar, cinnamon, baking powder, and salt. Beat in milk, eggs, melted butter, and vanilla extract. Stir in dried cranberries. Spread into a 9x13 inch baking dish.

3.Bake in preheated oven for 40 minutes.
 
Serves 4 and, for anyone counting calories, each serving has 790 calories

Chilly mornings are near!

So with it being chilli-er in the mornings, we have been really craving some hearty , and warm breakfasts.  I started the search through my thousands of recipes on here, and found some great ones!!!  Hope you guys can enjoy, and if you aren't lucky enough to be havign the great weather we are, then save them till you are, or eat them anyways!  Thats where the fun is...  MIX IT UP!!!

Little Monarch Munchies

You bet these little snacks will be at Nevaeh's "tea" party.  These will go great with the butterfly theme we are doing.  Theses are fun to make, and fun to eat, and healthy for your little tyke.  They are loaded with iron!!!  Serve with some celery and peanut-butter, and you have one yummy snack!

Little Monarch Munchies
Ingredients
8 Pepperidge Farm butterfly crackers
4 tsp. red-pepper or plain hummus
4 tsp. currants

Directions
1. Spread crackers with hummus and arrange currants on top to resemble a butterfly. Serves 2

Blueberry-Banana Stacks


Blueberry-Banana Stacks
Ingredients
6 mini chocolate, caramel, or berry-flavored popcorn cakes
1 to 2 Tbs. strawberry-flavored cream cheese
6 banana slices
6 fresh blueberries

Directions
1. Spread cakes with cream cheese and top with banana slices. If desired, dollop with additional cream cheese and top with a blueberry. Serves 2.

Frozen Confetti Yogurt Treats


Frozen Confetti Yogurt Treats
Ingredients
2 cups low-fat vanilla yogurt
1 cup assorted berries (raspberries, blueberries, blackberries, chopped strawberries)
5 pretzel rods, halved, or 10 baked snack stick crackers

Directions
1. In a large bowl gently stir together the yogurt and fruit. Spoon into 4-ounce ice-pop molds or 3-ounce paper cups. Cover molds or cups with foil; use a sharp knife to cut a small hole in the foil and insert cut side of pretzel rod or snack stick. Freeze until firm. Remove foil and mold or cup before serving.
2. Store for up to a month. Makes 6 pops.

Snails on the side

These are quick and easy to make, and the kids LOVE them!!!

Bread Stick Snails
1 tube (11 oz.) refrigerated breadsticks
1/4 cup purchased basil pesto
Coarsely shredded carrots

Directions
1. Heat oven to 375°F. Unroll dough and separate at perforations into strips. Spread strips with pesto and roll up into a coil, leaving a curved end, so it looks like the head of the snail. Secure with a toothpick. Place upright on a baking sheet.

2. Bake for 10 minutes, or until golden. To serve, use the tip of a sharp knife to poke holes for antennae; insert two carrot slivers. Refrigerate for up to 2 days; reheat at 350°F. Makes 12.

Warm Garlic pull-aparts

Cheesy Garlic Pull Aparts

3 tablespoons butter
3 cloves garlic, minced
2 teaspoons dried parsley
1/4 teaspoon garlic powder
1 12 ounce can Pillsbury Golden Layers Biscuits
1 cup mozzarella cheese, part skim milk
                 2 tablespoons parmesan cheese, grated                       
We love to serve these as appetizers...  Serve with Warm pizza sauce and watch them dissappear.
1.Heat oven to 425.
2. Melt butter in small bowl. Stir garlic, parsley and garlic powder into butter. Pour butter mixture into a pie pan.
3. Cut biscuits into 4 sections each (or as many as you like). Place in pan. Toss buiscuits with garlic butter mixture, and both cheeses.  Top with a few sprinkles of the cheese.
4. Bake for 10-15 minutes until biscuits are cooked through.
5. Invert upside down onto a plate. (I take a knife around the edges of pan to release stuck on cheese before inverting to plate.). Serve with warm pizza sauce.

Creamy Bacon Carbonara

Whats for dinner tonight?

How about a Creamy Bacon Carbonara?  Sounds yummy, here's a very easy recipe that is to die for!!!  Hope you family enjoys as much as my family!

Ingredients:
4 eggs
1/2 Cup heavy cream
1/2 cup parmesan
2 tablespoons dried parsely
2 teaspoons garlic powder
1 teaspoon crushed red pepper flakes
1 pound bacon, cooked and crumbled
1 small onion, diced (opt.)
3 mushrooms, diced (opt.)
1 lb linguini, cooked

Directions:
1. Beat the eggs, cream, parmesan, parsely, garlic, red pepper flakes, and salt together in a small bowl with a fork. 
2. Fry the bacon until crisp and set aside on paper towels to drain the grease off.  Using the grease in the pan, saute` the onions and mushrooms together until the onions are translucent and golden.  Drain the pasta, add the onions and mushrooms. 
3. Mix the cream mixture into the pasta, and stir over low heat for one to two minutes.  Add bacon, and keep stiring for another two minutes.

Garnish with additional parmesan, and crumbled bacon ans serve with a crusty french bread, and a salad.  YUMMY!!!

Honey Mustard Roasted Chicken

Honey Mustard Roasted Chicken
Rich, flavorful honey mustard chicken with carrots, squash and potatoes.

Ingredients:
1 lb. potatoes, cubed
2 lbs. chicken breasts
3 medium carrots, sliced
1small squash, cubed 
2 tablespoons olive oil
1-1/2 tablespoons honey
3 tablespoons mustard
1 teaspoon rosemary
3 cloves garlic pressed
1 tablespoon season salt
1 teaspoon dried parsely 
salt and pepper to taste

1. Preheat oven to 425 degrees F.

2.  In a shallow pan, toss potatoes, carrots and squash with oil, season salt, salt and pepper.

3. Sprinkle peeled, pressed garlic cloves across the vegetables and scatter the rosemary and parsely on top.

4. Arrange the chicken among the vegetables and bake uncovered for 30 minutes.

5. Meanwhile, stir the mustard and honey together.

6. Remove the pan from the oven. Carefully take the chicken from the pan to another clean plate. Spread the honey-mustard mixture over the chicken.

7. Stir vegetables in the pan, return coated chicken to the pan, and place pan back into the oven. Bake 10-20 minutes, until chicken is cooked and vegetables are tender.

Garlic Fries

Original Recipe came from Cooking Light Magazine, I got it from my sister.  Our family has really enjoyed it, hope yours do to!

Garlic Fries
4 teaspoons canola oil
3/4 teaspoon salt
3 pounds peeled baking potatoes, cut into 1/4-inch-thick strips
Cooking spray
2 tablespoons butter
8 garlic cloves, minced (about 5 teaspoons)
2 tablespoons finely chopped fresh parsley
2 tablespoons freshly grated Parmesan cheese



Directions:
1. Preheat oven to 400°.
2. Combine first 3 ingredients in a large zip-top plastic bag, tossing to coat. Arrange potatoes in a single layer on a baking sheet coated with cooking spray. Bake at 400° for 50 minutes or until potatoes are tender and golden brown, turning after 20 minutes.
3. Place butter and garlic in a large nonstick skillet, and cook over low heat 2 minutes, stirring constantly. Add potatoes, parsley, and Parmesan cheese to pan; toss to coat. Serve immediately.

Makes 6 servings.

Grilled Terriaki Chicken

A Very yummy-perfect-perfect-for-summer grilling recipe. 
Grilled Terriaki Chicken

1/3 cup water
1/4 cup sherry, or chicken broth
1/4 cup reduced-sodium soy sauce
2 garlic cloves, minced (or 1/2 tablespoon garlic powder)
1/2 teaspoon ground ginger
2 Tablespoons Brown sugar
2 (6 ounce) skinless, boneless
chicken breast halves

Directions:
In a small saucepan, combine the first six ingredients. Bring to a boil over medium heat; cook for 1 minute. Cool for 10 minutes. Pour into a resealable plastic bag; add chicken. Seal bag and turn to coat; refrigerate for at least 4 hours.


Drain and discard marinade. Grill chicken, covered, over medium heat for 10 minutes on each side or until juices run clear.
